Chicken Salpicon

4-6 boiled chicken breasts (diced)

2-3 tomatoes (diced)

1 bundle cilantro (chopped)

1 avocado (diced)

1-2 bundles of scallions (chopped)

2-5 jalapenos (chopped) depends on how spicy hot you want the dip

1/4 cup of vinegar

1/4 cup of vegetable oil

1/4 tsp salt

1/4 tsp pepper

Mix all ingredients together and serve with chips. I usually add more of the last 4 ingredients until it tastes how we like it 🙂
