Chicken Parmesan Burgers

1 lb. ground chicken (makes 4-5 burgers)

1/4 cup grated Parmesan cheese

1/4 cup plain bread crumbs

2 tsp. Italian seasoning

1/4 cup chopped flat leaf parsley

1 T. minced garlic

1 shallot, finely diced

1/2 tsp. salt

1/4 tsp. pepper

1 egg

About 1 cup pasta sauce

Mozzarella or Provolone cheese (sliced or shredded)

Hamburger rolls

1. Place Parmesan cheese, bread crumbs, Italian seasoning, parsley, garlic, shallot, salt and pepper in a medium bowl and stir to combine. Add the ground chicken and egg and gently mix until everything is evenly combined. Form mixture into patties and let refrigerate for 30-40 minutes to allow flavors to meld.

2. Preheat your broiler and make sure rack is about 6 inches from the heating element. Spray a pan with nonstick cooking spray and broil the burgers for 5-6 minutes on the first side. Flip burgers and broil the other side for 4-5 minutes or until cooked through.

3. Remove pan from oven and top each burger with tomato sauce and cheese. Return to oven and broil for about a minute or until cheese is melted. Pop the rolls under the broiler briefly too if you want them toasted. Be careful though because I burnt my rolls the first time!!
