Santa Fe Soup

2 lbs ground beef

1 large onion, chopped

2 pkgs. Hidden Valley Ranch Dressing Mix (not the dip mix)

2 pkgs. taco seasoning mix

1 can light red kidney beans

1 can pinto beans

1 can black beans

1 can Ro-Tel tomatoes/chilies

1 can diced tomatoes

2 11 oz. cans shoepeg corn (or use frozen)

2 cups water


1. Brown meat and onion over medium heat, do not drain.

2. Add all cans, do not drain.

3. Dissolve dry mixes together with the 2 cups of water and add to soup.

4. Simmer for 1-2 hrs.


***Serve with chopped green onions, shredded cheese, sour cream, and Tostitos***
