Tex-Mex Ravioli Casserole

1 (16 oz.) jar mild salsa

1 (10 3/4 oz.) can tomato puree

1/2 tsp. ground cumin

1 (28 oz.) bag frozen cheese ravioli, unthawed

1 (19 oz.) cans black beans, rinsed and drained

1/2 cup cilantro, chopped

1 bunch green onions, sliced

2 cups (8 oz.) shredded sharp Cheddar cheese

1 cup (4 oz.) shredded Monterey Jack cheese

 

**Preheat oven to 350 degrees and lightly grease a 2-quart or 11 X 7 inch baking dish**

1. Combine first 3 ingredients. Pour 1/2 cup of sauce mixture on the bottom of baking dish. Top evenly with ravioli and layer with black beans, cilantro, green onions, and remaining sauce mixture; top evenly with Cheddar and Monterey Jack cheeses.

2. Cover with aluminum foil and bake for 45 minutes. Uncover and bake for an additional 5 minutes.
