Fiesta Chicken Bell Peppers

***Makes 8 servings & takes 1 hr to cook***

 

2 T. olive oil

1 medium onion, chopped

4 T. minced garlic

4 cups chopped, cooked chicken

1 1/2 cups shredded Cheddar cheese

1 cup tomato sauce

1 (4 oz.) can chopped green chilies

1 1/2 tsp. paprika

1/2 tsp. cayenne pepper

1 tsp. seasoning salt

1 tsp. onion powder

1/2 tsp. pepper

8 bell peppers in a variety of colors

 

1. In a large saucepan, combine the olive oil, onion, and garlic, saute at medium heat until the onions are lightly translucent.

2. Combine the next 9 ingredients and add to the mixture in the saucepan (can be prepared 6 hrs ahead and refrigerated).

3. Preheat oven to 375 degrees. Cut around stem of each bell pepper and remove, save for later use. Scoop out seeds and rinse peppers. Divide filling among peppers (about 1/2 cup each). Replace tops of peppers and stand in a sprayed shallow cooking dish. Bake for about 50 minutes or until peppers are tender. Remove tops before serving.
