Pulled Chicken Sandwiches

4 boneless, skinless chicken breasts (about 2 lbs)

Salt and pepper

1/2 cup finely chopped onion

4 T. minced garlic

1 1/3 cups barbecue sauce

1/2 cup apple cider vinegar

Hot pepper sauce

6 Kaiser rolls

1 1/2 cup shredded Monterey Jack cheese

 

1. Season chicken with salt and pepper and place in a large pot with the onion, garlic, and just enough water to cover the chicken (about 1 1/2 cups).

2. Add the barbecue sauce, vinegar, and a few drop of hot sauce and bring to a boil. Reduce heat and simmer until the chicken is cooked through, about 15 minutes.

3. Remove the chicken and shred with two forks.

4. Boil the sauce, skimming occasionally, until reduced by half (about 15 minutes). Season with salt and pepper. Add the chicken and heat through. Spoon mixture onto rolls and top with the cheese.
