Pumpkin Bars

2 cups all-purpose flour

1 1/2 cups packed brown sugar

2 tsp. baking powder

1 tsp. baking soda

2 tsp. pumpkin pie spice

1/4 tsp. salt

1/2 cup vegetable oil

1/2 cup apple juice

1 can (15 oz.) pumpkin (not pumpkin pie mix)

2 eggs

Frosting:

1 container (16 oz.) of cream cheese ready-to-spread frosting

 

***Preheat oven to 350 degrees & grease 15 X 10 inch pan with shortening and lightly flour***

1. In large bowl with an electric mixer, beat bar ingredients on low speed until moistened. beat 2 minutes on medium speed. Spread into batter pan.

2. Bake 20-30 minutes. Cool completely (about 1 hr).

3. Spread frosting over cooled bars. refrigerate until set, about 30 minutes. Cut into 8 rows by 6 rows. Store in refrigerator.
