Mini Lemon Blueberry Bites

***This recipe makes 2 pies, 24 mini pies, or 60 mini fillo shells and 1 pie***

 

Mix first 4 ingredients together:

8 oz. pkg. cream cheese, softened

1 can sweetened condensed milk

1/2 cup lemon juice

4 egg yolks (save egg whites)

Add: 1 pt. blueberries

Spoon into desired crusts.

 

Meringue:

4 egg whites

1/2 tsp. vanilla

1/4 tsp. cream of tartar

Beat above 3 ingredients until soft peaks form.

Gradually add: 8 T. sugar

Beat until peaks form and sugar dissolves. Spread meringue on filling and bake at 350 degrees until meringue browns on top. (about 25 minutes)
