Bourbon Chicken

3 boneless/skinless chicken breasts, cut into bite-size pieces and seasoned with salt, pepper, and garlic powder

2 T. olive oil

1 T. minced garlic

1/4 tsp. ground ginger

2 tsp. crushed red pepper

1/4 cup apple juice

1/3 cup light brown sugar

2 T. ketchup

1 T. cider vinegar

1/2 cup water

1/3 cup soy sauce


***Serve over brown rice and steamed veggies. I added steamed broccoli in with the chicken mixture the last 5 minutes of simmering***

1. Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Remove chicken.

2. Add remaining ingredients, heating over medium until well mixed and dissolved. Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes (add your steamed vegetable(s) of choice last five minutes).

3. Serve over brown rice.
