Cherry Coke and Jalapeno Meatballs

Glaze:

1/2 cup brown sugar
1/2 cup cherry coke
3 jalapeños, finely chopped (divided)

Meatballs:

1 pound ground beef
1 large egg
1/2 cup breadcrumbs

Seasoning:

1 1/2 tsp salt
1 1/2 tsp sweet paprika powder
1/2 tsp onion powder
1 tsp black pepper
1/2 tsp ground nutmeg
1 tsp brown sugar
1/4 tsp garlic powder
1 tsp dried parsley
pinch of cayenne

Preheat oven to 400 degrees

1. Mix beef, eggs, breadcrumbs, and all the seasonings together with your hands in a large bowl. Add half the chopped jalapenos and mix again.

2. Make medium-sized meat balls and place on a cooking sheet that is covered in parchment paper. Bake for 15 minutes, then flip and bake for an additional 10 minutes.

3. Meanwhile, make the glaze. In a saucepan, mix the brown sugar and the rest of the chopped jalapenos. Pour 1/2 cup of Cherry Coke in the sauce pan and bring it to a boil. Reduce heat and simmer 7-10 minutes over medium heat, stirring every now and then.

4. After the meatballs have baked for the additional 10 minutes, brush them with the glaze and bake for 5 more minutes!
