Black and White Cookies

2 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 tsp. baking soda

1/4 tsp. salt

1 cup packed dark brown sugar

3/4 cup granulated sugar

2 sticks (1 cup) salted butter,softened (I used unsalted)

3 large eggs

2 tsp. vanilla extract

2 (5 1/4 oz) white chocolate bar, coarsely chopped (about 2 cups)

***makes 3 dozen cookies***

Preheat oven to 300 degrees

1. In medium bowl, combine flour, cocoa, soda, and salt with a wire whisk. Set aside.

2. Blend sugars together with a mixer, then add butter and mix to form a grainy paste. Add eggs and vanilla and beat until smooth.

3.  Add the flour mixture and blend at low speed, then blend in chocolate. Do not over mix.

4.  Drop rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake 18-22 minutes and transfer immediately to wire racks.
