Chicken Lime Soft Tacos

1 ½ lbs. boneless, skinless chicken breasts, cut into chunks or strips
¼ c. red wine vinegar
1 lime, juiced
2 t. sugar
1 t. salt
1 t. ground black pepper
2 green onions, minced
2 cloves garlic, minced
¼ – ½ c. fresh cilantro, chopped (more or less to taste)
Tortillas
Toppings:
Diced tomatoes
Shredded lettuce
Shredded cheese
Light Sour cream
Salsa
Other favorite taco toppings
Directions:
1. Sauté chicken over medium high heat until browned.
2. Add remaining ingredients, except cilantro and simmer 10 minutes or until chicken is cooked thoroughly. Add cilantro and simmer for an additional 30 seconds.
3. Serve on warmed tortillas with desired toppings.
