Jade Red Chicken

***Serve over a bed of rice. Serves 4****
Ingredients For The Chicken:
1 lb. boneless, skinless chicken breasts, cut into bite size pieces
2 eggs
1 tsp. garlic salt
1 tsp. garlic powder
1 1/2 cups corn starch
canola oil for frying, 4 cups
Ingredients For Jade Red Glaze:
2 tsp. sesame oil
1/2 cup red chili oil
1 T. red chili paste/sauce
1 cup ketchup (can also use tomato sauce)
1 cup powdered sugar
4 T. minced garlic
1 bunch green onions, chopped
1.  Whisk together all ingredients for glaze (except for your green onions), add to a small saucepan, and bring to a simmer over medium heat. Reduce heat to low and let cook down while you prepare the chicken.
2.  In a deep sided skillet or deep fryer, heat your oil to about 350 degrees.
3.  In a large bowl, whisk your eggs together along with the garlic salt and garlic powder; set aside. Put your corn starch in a shallow baking dish.
4.  In assembly fashion: dip your chicken in the egg mixture, then dip it in the cornstarch; shaking of any excess. Add chicken to fry pan, and cook for approximately 4 minutes. (It cooks quick!) Have a large bowl ready to set your cooked chicken in.
4.   Add your green onions to the cooked chicken. Pour Jade Red Glaze on top. Toss to coat. Serve immediately.
