Holiday Hot Chocolate

4 cups whole milk

4 cups half-n-half

1 lb. white chocolate, chopped

2 tsp. pure vanilla extract

Seeds scraped from 2 vanilla beans

1/3 cup Grand Mariner

1. In a saucepan on medium heat, heat the milk and half-n-half to just below the simmering point.

2. Remove the pan from the heat and add the white chocolate. When the chocolate is melted, add the last three ingredients and whisk vigorously. Reheat very gently and serve.

Eggnog

***Makes 12 cups and must be chilled for at least 8 hrs***

4 cups whole milk

1 (12 oz.) can evaporated low-fat milk

1/2 cup sugar

1/4 tsp. ground cinnamon

1/8 tsp. ground nutmeg

6 large eggs

1/4 cup brandy

1 tsp. vanilla extract

1. Place whole milk and evaporated milk in a large saucepan. Bring to a simmer over medium heat.

2. Combine sugar, cinnamon, nutmeg, and eggs in a large bowl. Gradually add hot milk to egg mixture, stirring constantly with a whisk. Return milk mixture to pan, and cook over medium-low heat until thick (about 8 minutes), stirring constantly.

3. Pour into a bowl; stir in brandy and vanilla. Press plastic wrap onto surface of eggnog and chill 8 hrs or overnight.

2 qts. of Apple Cider

1 qt. Cranberry Juice

3/4 cup sugar

2 sticks cinnamon

1 tsp. allspice

1 small orange studded with cloves

1 cup rum (or more)

 

**Combine in crock pot and cover and cook for one hour, then can be set on low for 4-6 hrs.

Deluxe Spiced Tea Mix

2 jars (21.1 ounces each) orange breakfast drink mix

1 cup sugar

1 envelope (5 ounces) sweetened lemonade drink mix

1 jar (3 ounces) unsweetened instant tea

2-1/4 cups red-hot candies

2 teaspoons each: ground allspice, cinnamon, cloves and nutmeg

 

In an airtight container, combine all ingredients. Store in a cool dry place up to 6 months. Yield: 10 cups (about 120 servings).

To prepare tea: Dissolve 4 teaspoons mix in 1 cup boiling water; stir welll.
